Sweet Butternut Squash Chowder
This isn't a dessert, per se, but this butternut squash recipe is sweet and makes a perfect appetizer or main dish.
20 oz. of fresh butternut squash
1/4 cup mild onion diced
16 oz. can chicken broth
16 oz. can cream corn
1/8 teaspoon cinnamon (a little more makes it even sweeter!)
1 tablespoon sugar
2 cups milk
Bring 1 quart of water to a boil.
Add cubed squash.
Cover and cook until tender.
Drain and puree squash.
Add onion, chicken broth, creamed corn, cinnamon and sugar.
Bring to a boil.
Boil for 5 minutes.
Add milk. Reduce heat.
Cook 10 minutes. DO NOT BOIL.
